Just wanted to thank you again for
the spectacular dinner last Thursday. We filled in our friends on
every last detail and how much we enjoyed it. Also got your card
today, another treat, what a nice touch. We have 2 couples "in" for
an interactive once the weather cools off, sometime this fall.
So we replicated (or tried to!) the tilapia on
Friday night and essentially had the same dinner again with the
kids, giving them the blow by blow of how much fun we had with you.
My 12 y.o. daughter inhaled 2 pieces of tilapia (one yours, one the
fake we made), 2 servings of risotto, and a huge salad (again, we
supplemented but whatever). The other big hit was the salad
dressing. Is there any way I can pry the recipe from you? Found
Espiritu in a local liquor store, so we're good to go. Thank you so
very much again. (And thank you for contributing to the Allenwood
School Gift Auction)."

Ted - "Last night hit the spot! We tried both salmon dishes, string beans and the sweet potato spears. We liked them all, and I especially like the sweet potato spears, they were even good at room temp. Tonite we're having the bbq meatloaf and mashed potatoes...good weather for it...thanks again." You came to the house and questioned me as to likes and dislikes and I chose six entrees from a large variety. It is absolutely amazing that as intense as you made the flavor of these brownies, we could still taste the different flavors of tropical fruit contributed by the Espíritu. I must say, however, that you may want to consider including a warning label with brownies made with this recipe because it was so intensely rich that my wife and daughters were moaning, they were ‘intoxicated’ with joy; as for me, the top of my head felt like it was going to sprout hair (or maybe a cocoa plant?). Ted, I just want to let you know that Roy and I loved the salmon dinner last night, not to mention coming home to a freezer FULL of wonderful meals for the next few weeks, and, a spotless kitchen....can't wait to try that bbq turkey meatloaf tonight and garlic roasted mashed buds...I was so excited that I told my associate and he wants to call you for the same service. He lives in Yardley, PA, which is Bucks County, about an hour from my house (on the other side of Trenton). He and his wife work and dine out much of the time like Roy and I....he is diabetic and currently following the LA weight loss program (but he loves to eat...). Anyway, I hope you can work with him.
