Chimichangas - Mexican seasoned filling made with Zucchini, Green
Chile, Onion and Cheddar Cheese rolled inside a Flour Tortilla. A

Chili Relleno
Casserole - Casserole with layers of Green Chile and Jack Cheese
covered with an Egg Batter and Baked. Served with Cumin-scented rice.
Seafood
Gratin of Scallops,
Tomatoes, and Basil - Bay scallops in a garlic tomato basil
cream sauce topped with Swiss cheese. Mmmm....serve with garlic bread
and a tossed green salad!
Halibut with Lemon
Caper Butter - Broiled Halibut with a Tarragon lemon caper
butter. Served with roasted new potatoes and fresh vegetables.
Swordfish with New-Wave
Tartar Sauce - Broiled Swordfish topped with a
mayonnaise and Yogurt based tartar sauce with Cornichon pickles, fresh dill,
horseradish, Dijon mustard, and capers. Served with a side of Rice

Chicken Chorizo Pasta
- Chicken strips, Chorizo, corn and red bell
peppers in a Green Chile Cilantro cream sauce, tossed with pasta.
Chicken in
Lemon-Wine Sauce - Sautéed Chicken Breast in a light
white wine lemon chicken sauce, finished with lemon zest and parsley.
Served with white rice.
Southwest Turkey Chile
- Turkey with black beans, red onions, leeks,
celery, red bell peppers, corn, green chile, and cilantro in a uniquely
seasoned chili sauce. Served with Jalapeno and red pepper muffins!

Dijon Herbed Lamb Chops
- Broiled Lamb chops brushed with a Dijon and
Herb baste. Served with boiled New Potatoes with herb butter and green
beans.
Roast Beef Wellington with
Horseradish Sauce - Baked puff pastry filled

horseradish sauce.
